The trusty ol slow cooker!
This week I chucked a beef roast, with some mixed herbs, gravy powder and a litre of beef stock in my slow cooker.
I sliced some up and added roast veggies from a pre prepared pack of frozen veg and there was one meal.
I shredded the rest of the roast (FYI for anyone with uncooperative hands like me, I used my mixer to do this).
I put the meat in take away containers.
One meal from that I added frozen mixed veg to the meat and layered it with sweet potato mash (can buy already prepared or pre cut, or this is something you can do with your support worker) and cheese. Cottage pie.
I added a can of mushrooms to some of the other meat, and put it in pastry shells (again can get in pre press). Beef and Mushroom pie.
Another is to add taco spices and you have tacos, nachos, or any other Mexican dish you want to throw together.
I use taco boats for loads of different meal types. But that's a whole new post.
